apple and elderberry
wine

4 pints of freshly pressed
apple juice
1.5 lbs elderberries, previously
frozen
3 lbs sugar
1/2 teaspoon of wine yeast
Dissolve the sugar in hot
water to make a syrup - cool until just warm. Blitz the elderberries
in a food processor and strain through a sieve. Add to apple, along
with the syrup. Add the yeast.
Allow to work out, racking
once during fermentation. When fermentation has completely stopped,
bottle.. and enjoy.
