350g peeled
and cored apples
100g sugar
100g butter
1 egg
225g SR
flour
2 tsp mixed
spice
3 tbsp
milk
3 tsp demerara
sugar
Grate the
apples and set aside. Beat the sugar and butter together, then beat
in the egg. Fold in the flour and spice, and the milk. The mixture
will seem quite dry. Fold in the grated apple, and spoon the mixture
into a 2 lb loaf tin. Sprinkle with the demerara sugar.
Cook at
190 Cat the top of the oven for about an hour, or 160 for 11/2 hours,
or until done. (really, it's a pretty relaxed recipe!) The top should
look golden brown, and although the cake will still look a little
moist (due to the apples) it should spring back when pressed.
Serve cold.
