blackberry meringue

batch of blackberry coulis
meringue
made from 3-4 egg whites (or about 5-6 ready made nests)
300g cream
cheese
400g creme
fraiche
2 tbsp
icing sugar
Blend the cream cheese
and creme fraiche together, along with the sugar. Stir in about 4/5s
of the coulis (yes next time I will measure it, and amend this recipe).
Just before serving; crush
the meringue into chunks, and stir into the cheese mixture. Drizzle
a little coulis over the top.
