brown sauce

this is my take on HP

1 kg green tomatoes

300g onion

200g bramley apple

200ml malt vinegar

2 tbsp worcester sauce

2 cloves of garlic

1 dst spoon black treacle

1 tsp cinnamon

1 tsp mace

1.5 tsp all spice

150g soft dark brown sugar

1/4 tsp hot chili powder

1 tsp ground ginger

1 tsp dry English mustard

1 tsp tamarind sauce

plenty of black pepper

Chop the tomatoes, and onion. Peel core and chop the apple, and in a pan with the vinegar, worcester sauce and garlic and simmer for a couple of hours until everything is soft. Blend. you could push through a sieve at this point, but it doesn't seem necessary. Add the rest of the ingredients and boil until thick. Bottle in hot steralised jars.
