How much potato and how much
cabbage is a matter of taste, and what leftovers you have lurking, but
I prefer a ratio of about 2:1 mash to cabbage, by volume. ish. The ideal
cabbage is a spring green, but you can use pretty much any so long as
they are cooked, even sprouts.
Mash them together, then
get a frying pan nice and hot with about 2 tablespoons of oil. Once
its hot, throw in the mash mixture and stir around. The oil will probably
get absorbed, so a good non stick frying pan is very helpful. Keep stirring,
mixing in crispy bits as you go, until its reasonably dry, cooked through
and there is some browning.
Best served with poached
or fried egg, bacon and baked beans.
variation: bubble and swede
- use equal quanities of potato and swede mash, cook as above. Very
tasty.
