gram flour (chickpea flour)
oil for frying
A family favourite - particularly
when we have a glut of courgettes.
Grate the courgettes (a food
processor is ideal for this), and place in a bowl - the cougette will
now be pretty wet. shake in enough gram flour to make a fairly thickly
sticky mix. In a frying pan, heat oil for shallow frying. Shape handfuls
of the mixture into burger shapes, and place gentlly in into the hot
oil and cook until brown, turning as you go.
We like them with fried egg
and bacon.
