sorrel and courgette
soup
this makes a thin lemony
tasty soup
2 courgettes
bunch of sorrel
leaves
1 onion
knob of butter
vegetable stock
Chop onion and cook gently
in the butter while you chop up the courgettes, then add these to cook
a little too. Wash and strip sorrel leaves from any hard stems and add
to the pot. Cover with the vegetable stock and cook until the courgettes
are soft. Blend and serve.
