damson cordial
a really tasty refreshing
drink:
damsons
water
sugar
Pick over the damsons removing
leaves and any that have gone bad, then place them whole in a large
saucepan with water up to about half the level of the damsons. Cover
and boil, for about 40 - 60 mins. . The liquid level should rise and
the damson disintegrate and stones fall out. Put all of this pulp in
a jelly bag and strain overnight.
Next day, measure the volume
of juice, and place back in the pan, and add the same volume of sugar.
Bring gently to the boil, stirring to dissolve the sugar. Boil for 2
minutes. Pour into sterile bottles and allow to cool, before storing
in the fridge. I doubt very much it will keep (not sure as we drank
ours pretty fast!) so freeze what you will not consume in the next few
days.
To serve - dilute with water
to taste, either with still or sparkling water. Or use as a mixer.
