fried green tomatoes
Most recipes for fried green
tomatoes involve eggs, making a sort of batter. This is delicious, but
here is a more simple and quicker version:
1 or 2 green tomatoes
2 tablespoons of corn meal
(polenta)
pinch of salt
1/4 tsp paprika
4 slices of salami, garlic
sausage or 3 rashers of bacon
oil for frying
Mix the corn meal, salt and
paprika and spread on a plate. Slice the tomatoes about 0.5 cm thick,
and press both sides into the corn meal mixture.
Cut the salami into quarters
and fry in a little oil until crisp, set aside. Add a little more oil
to the same pan and fry the tomatoes until brown on each side. Serve
with the salami. Serves 1
