green tomato and
feta tarte tatin

1 or 2 green tomatoes (beefeater
kind is best)
1 onion, sliced
olive oil
balsamic vinegar
1 packet feta, cubed
puff pastry
You will need a shallow pan
that can go on the hob and in the oven.
Cut the tomato into quarters
then slice into apple shaped slices. Cook the onion in a slug of olive
oil, until just softened, then add the tomatoes. Meanwhile, roll out
the pastry and cut a circle about 1 cm larger than the pan (I press
the lid into the pastry and cut around that) .Fry for about 5 minutes,
then add a splash of balsamic vinegar, and heat until it is bubbling.
Remove from the heat and sprinkle over the feta. Place the pastry over
the top and tuck down the sides.
Bake in the oven for about
10 minutes at a medium heat - there are guidelines to cooking the pastry
on the packet. Once the pastry looks brown and is cooked, remove from
the oven and turn out upside down onto a plate.
