hot water crust

200g white bread flour
275g plain flour
175g lard
125ml water
1.5 tsp salt
Put the flours and salt
into a bowl and mix. Heat the water and lard together carefully, until
the lard is melted (taking usual precautions when working with hot
fat). Stir into the flour, then mix well, using your hands once it
is cool enough to handle. Set aside unil it is cool enough to roll
out.
