lemon muffins

1 lb plain
four
6 tsp baking
powder
4 oz sugar
2 oz butter
half a
pint of milk
2 eggs
lemon
curd
Begin by gently melting
the butter in a saucepan. Meanwhile mix the flour, baking powder and
sugar. Prepare a muffin tin with twelve muffin cases. When the butter
has melted, mix it with the milk and beaten eggs, then pour this mixture
into the other ingredients. Stir until its all mixed in.. don't worry
about lumps.
Put a dessert spoon of
mixture in each case, put a teaspoon of lemon curd on top, then top
each one with another spoonful of mixture.
Bake at 190C for about
30 mintures, or 150C for 40...or until they look slightly brown on
top.
