limoncello
I got this recipe
from
UKTV Food, James Martin: Sweet
As always, I did
it slightly differently... but it makes limoncello as I know it - very
strong sweet lemony sipping drink.
200g sugar
150 ml water
6 lemons
700ml vodka (I bought
the second cheapest... ie not the very worst.. but nothing special!)
Peel the lemons with a potato
peeler to get the zest only, and put this along with the juice and any
flesh that comes out when you juice, into a heatproof bowl.
Put the sugar and water in
a pan and bring gently to the boil, stiring to dissolve the sugar. the
boil rapidly for 3-4 minutes until the mixture looks syrupy. Turn off
the heat and wait until its cooled just a little, then pour over the
lemon peel and juice. When this mixture is fairly cool add the vodka,
saving the bottle for later.
Mix everything up then place
in a jar (or jars, but make sure the peel is evenly distributed if you
have to divide it), and leave it somewhere out of direct sunlight, where
you will notice it. Shake the jar whenever you come across it. A month
later strain and bottle, and its ready to drink. Keep it in the fridge
ready chilled for drinking!
Serve in small shot glasses,
ice cold.
