nettle soup
half a large colander full
of nettle tips (best picked in spring)
1 onion
1 clove of garlic
knob of butter
1 medium potato
seasoning
dollop of cream
Chop the onion and garlic
and sweat in the butter for a few minutes while you wash the nettles.
Then add the nettles and cover with water. Add the peeled chopped potato.
Cook until the potato is soft. Then blend. Taste and season. Add the
dollop of cream.
