pear liqueur
A bit different to the usual
liqueurs, and a really good way of using up some pears! This recipe
makes about half a litre.
220g white sugar
250 ml water
500g pears
250ml vodka
put the sugar and water in
a pan and heat, without boiling, until sugar is dissolved. Peel, core
and dice pears and drop them into the syrup as you go. Bring to the
boil and boil. covered, until the pears look transparent. Turn off the
heat and leave overnight. Next day, strain the pear mixture through
a fine sieve, reserving the liquid. Save the pears too, which will be
a bit 'candied' as they can be eaten or used in other recipes. Mix the
pear liquid and vodka together in a jug and then bottle. Ready straight
away!
