plums - red skinned such
as victoria or majories seedling, can be frozen.
sugar
8 oz self raising flower
1 heaped tsp baking powder
1 tsp cinnamon
4 oz marg
a little milk
1 tbsn demerra sugar
Cut the plums in half and
stone them. Put a layer in a small baking dish and sprinkle librally
with sugar (how much depends on how sweet you like your food and how
sweet the plums are). Put in a medium oven whilst you make the topping.
In a food processor, blend
the flour, baking powder, cinnamon and marg. Add enough milk to just
bring it together. Roll walnut sized lumps of the mixture in your
hands, then flatten and lay on top of the plum mixture, repeat until
covered.
Bake until the scones have
risen and ar lightly golden. Serve with cream.
