potato egg and bacon
mess
not exactly slimming food,
nor pretty, but very popular:
1 medium-large pan
of new potatoes - cooked (older potatoes could be used)
1 onion, chopped
slug of olive oil
2 garlic cloves,
crushed
6 slices of bacon,
sliced fairly small
3 eggs, beaten
1 mozzarella cheese
Fry the onion and garlic
in the oil for a few minutes, then add the bacon, when the bacon cooked,
add the cooked potatoes. Once they have started to brown, throw in the
eggs, and stir around quickly to distribute the egg mix over everything.
Cook for a further few minutes, then tear up the cheese and throw pieces
into the mixture and stir. Remove from the heat and call in the work
force from the fields to eat!
