strawberry pancakes
4 oz SR flour
1 oz sugar
1/4 pint of milk
1 egg
3 tablespoons wild strawberries
(ideally frozen then thawed)
a little oil
Mix together the flour
and sugar, then beat in the egg and half the milk, then the rest of
the milk, to a smooth batter. Stir in the strawberries along with
any juice.
Heat the oil in a frying
pan until hot, then cook spoonfuls of the mixture, turning as soon
as possible. Serve with a dusting of icing sugar and some clotted
cream or icecream.
