welsh cakes
8 oz plain flour
1 tsp baking powder
1/2 tsp mixed spice
4 oz butter
3 oz sugar
3 oz currants or mixed fruit
1 egg
a little milk
Welsh cakes can be cooked
on a griddle, or a heavy frying pan, or directly on a range.
Mix the flour baking powder
and mixed spice. Rub in the butter until resembles breadcrumbs, then
add the sugar and fruit. Beat the egg and stir in with a dash of milk
to make a firm dough. Roll out on a floured board to 5mm thick. Cut
into rounds. Wipe the griggle, pan or stove top with a papertowel with
a teeny bit of oil. Cook the cakes until brown on each side - 2-4 minutes.
Eat hot with butter!.
